Just after the turn of the twentieth century (1900) , white bread was being pushed heavily on the American and Canadian people. Older people were suddenly passing away at a sharply increased rate. They were succumbing to heart attacks at an increased level. It was at the time thought to be an old folks problem.

As years went by, younger and younger people were beginning to have more heart attacks. These serious health problems were robbing them of their life. Their mortality rate was escalating. Their diet it was found, had been killing them.

Dr. Wilfred E. Shute, Sr. MD in the 1930's up into the late 1950's or early 1960's made clinical research into this a priority. Later his son Dr. Wilfred E. Shute, Jr. MD carried on the torch in clinical research and development.

It was discovered by Dr. Wilfred E. Shute, Sr. MD that the procedure used to make white bread was stripping away vital nutrients. Most importantly, one called Vitamin E.

The wheat was no longer made by the time honored method of using stone wheels to grind it into flour. High speed steel rollers could do the same thing in a jiffy. Unfortunately, as Dr. Shute, Sr. MD discovered, the heat generated by the rollers was lethal to the vital nutrients in the wheat. Bread companies could now make a lot more money! A process known as "bleaching" was also used on the wheat. This would make the bread appear more appetizing.

A change of diet was needed. Dr. Wilfred E. Shute, Sr. MD had his heart patients stop eating white bread. He advised them to start eating bread made from
1.100 per cent Whole wheat and
2. processed by the method of having been stone ground.
This is a cool, non nutrient damaging process for the wheat into flour.

Dramatic improvements in his patients health did occur. In our area, Wonder bread makes a bread that is called Stoneground (which it is) and made from 100 per cent whole wheat bread.
Unfortunately, it is also made with High Fructose corn syrup

Doctor Shute was ridiculed (by others in his profession) for claiming his research into food induced illness was real. Even today, some in the medical profession still deny any relationship by certain foods causing medical problems in the population at large.
